My family likes pizza and we often have it on Friday nights for family movie night. Having pizza on hand in the freezer makes it just as convenient as a frozen supermarket pizza, but the taste (and price!) can’t compare with homemade pizza topped fresh, seasonal ingredients and all gluten and gluten and dairy free.
I use my family’s favorite Gluten Free Dairy Free Pizza Crust (it is also free of soy and nuts, and can also be egg and corn free). When making this freezer pizza plan, I pre-prep all the toppings the night before or as the first thing I do before making my pizzas. I only make a double batch of pizza crust at a time. A double batch makes four pizza crusts which I can shape, top, wrap and freeze before the crust rises. If it is really warm in the house, I work with two pizza crusts at a time, while the second two rest in the refrigerator.
The big tip I have for making homemade pizza for your freezer if to get a package of inexpensive aluminum catering trays from your local party supply store. I got mine several years ago and they are a little battered, but still going strong. I do not use the trays for baking (do NOT use them for baking!!), however, after lining the pans with parchment, they make a great sturdy pan to pat out your dough into a nice round shape and will hold the weight on the toppings so your pizza freezes flat. After topping 4 pizzas, I pop them into the coldest part of my freezer (not stacked) and let them sit until they are frozen. When the pizzas are firm it is time to wrap them. Woo-hoo!

Wrap pizza with the plastic wrap, then wrap with the foil. If you would like plastic wrap not to touch your pizza, place a round of parchment on top of the pizza before wrapping with the plastic. Set the pizza back into the freezer after labeling. You may now stack the pizzas on top of each other. To keep the frozen pizzas from cracking, I often put foil wrapped rounds of cardboard under the parchment or put a catering tray between every couple of pizzas. If your pizza does crack, don’t despair! Place frozen pizza onto a baking tray with the cracked areas touching, then bake.

Make two double batches (a total of 4 batches of dough to make 8 crusts) of Gluten Free Dairy Free Pizza Crust. Only make one double batch of dough at a time. When doubling a bread dough, no need to double yeast, so DO NOT double yeast when making the recipe. No harm done if you do, but not necessary, so why waste ingredients? :)

Taco Pizza - Do NOT add lettuce, guacamole, salsa or tortilla chips to the pizza before freezing. This makes enough topping for two pizzas.

. I was wondering where I might find a recipe for the shreddable mock-zarella cheese or the pizza cheese sauce that you reference in your pizza posts? We are newly GFCF and really struggling with the lack of cheese on our pizzas. Thanks!
