For the forth day of the Gluten Free Dairy Free Holiday Cookie Countdown we have Lemon Shortbread.

To make lemon shortbread, simply add 1 tablespoon of very finely grated fresh lemon zest to the recipe for Gluten Free Dairy Free Shortbread.  Easy-peasy!  I will be making a triple batch, and packaging half for Christmas and half for Christmas gifts.  Freeze in a sturdy freezer container with wax paper or baking parchment between the layers.
