I met a new GF friend (Hi, Denise!) at the Gluten & Allergen Free Expo in Chicago a couple of weeks ago (a few new friends, actually!  You need to go next year.  Totally fun.) and I promised to post my gluten and dairy free Mac’n “Cheese”…  Then, I realized I have a few versions.  The reason?  I like to use different bases for my “cheese” to rotate allergens.  I am wild and crazy like that…  Anyway, the one that is my family’s very favorite mac n’cheese is one using the sauce made from cashews.  It is buttery, creamy and oh, so good.  Mmmm…  Basically, just make the cashew “cheese” sauce and mix with gluten free noodles.  Here is a pic of the sauce made with corn elbow noodles.  Nom nom nom!!

Can’t do nuts?  I also have an Easy Peasy  Pizza “Cheese” you can use or wait for tomorrow for the gluten free, top 8 allergen free and corn free mac’n “cheese”.
