Menu Plan Monday – August 22, 2011
This week my big boy turns sixteen. I am not sure how that happened. He was such a little guy not that long ago, yet here we are… This year his birthday cake will be a lot of fun for me as he has requested a Dr. Who cake. Woo-hoo! I can’t wait! Here’s hoping frosting and cake construction comforts me from the reality of him growing up so fast… (Though I may still need a hug…)

The host of this week’s Gluten Free Menu Swap is Heather of Celiac Family. She has picked melon as the theme. We eat melon raw, just right after cutting it up most of the time, but I also like it in savory salad combinations and in smoothies. One of our favorite things to do with melon is to make Watermelon Slush. In fact, I served it at my son’s first birthday party fifteen years ago. 🙂
Monday-CC practice/Behind the Wheel for the teen/beach with kiddos/bake GF bread Chicken thighs with lime and cumin, salad and cantaloupe
Tuesday- CC practice/bake apple strussel muffins (freeze)/bake gf hamburger buns
Burgers on homemade hamburger buns, rosemary oven fries, salad watermelon
Wednesday– CC practice
Zucchini, Melon and Chicken Salad with poppy seed dressing
Thursday- CC practice/My son’s birthday (16 – how did that happen?)
Birthday boy’s choice (he hasn’t decided yet, except for the cake)
Friday- CC practice
Southwestern Spagetti Pie and salad

I always find something delicious to try in your menus. This week I’m thinking about the chicken thighs and Zucchini Melon Chicken Salad. And I love the watermelon slush idea. I need to try that with the frozen honey dew cubes I have in the freezer. Or maybe they’d be better in a smoothie?
Ooo, I love honeydew smoothies with coconut milk and lime or honey and mint! Yum! Honeydew makes a little denser slush, so just make sure your blender can take on the frozen cubes. 🙂
