Hi, everybody!  This past weekend I attended the Gluten Free Allergen Free Expo. It was amazing!  Then I drove 7 hour for home… Yeah… So, that means my menu will be up later today after I brew myself a huge pot of Chai.  🙂  Please check back for the tastiness. I am super excited to announce the first Gluten and Dairy Free OAMM Menu at Once a Month Mom posted yesterday!  I am working with Tricia of Once a Month Mom to put together this menu because, while it can already be tough getting dinner on the table with busy family lives, dealing with special dietary needs can make it even tougher.  I hope this menu helps ease getting healthy, delicious meals to your table. Please feel free to let me know what types of meals you would like to see adapted to gluten and dairy free freezer cooking. I would love to have your feed back on what would be most helpful on making ahead for your families as I plan future menus.  Also, if anyone has a great recipe on their site that freezes well, please let me know.  I would love to include it in an upcoming menu!

I am hosting this weeks Gluten Free Menu Swap this week.  The theme is asparagus.  I love those lovely little spears and I have a whole bunch of the little guys.  Such a tough problem to have!  I’ll be freezing quite a bit of it for later meals, and enjoying the rest fresh this week.

Asparagus and Leek Frittata, spicy sweet potato fries with kimchi


Tuesday: Piano lessons (need portable dinner)/high school track meet/make chocolate mini donuts from Silvana Nardone from this past weekend’s GFAFexpo for youth group on Wednesday

Pizza (using this pizza cheese) topped with shaved asparagus and salad

 

Wednesday: Mom help in 2nd grade class/dance lesson/youth group

Honey Chicken Kabobs (didn’t happen last week) and salad

 

Thursday:  Brownie Girl Scout meeting

Calico Beans in the slow cooker, blender corn bread and salad

 

Friday: Mom help in the school library

Make homemade pasta for perogies using the pasta recipe of  Sueson Vess from this past weekend’s GFAFexpo (filling ideas are sweet potato/caramelized onions, mushroom/roasted garlic/kale/pork and a apple pie filling) and stir fried asparagus.  Woo!

What is on everybody’s plate?

Heather of Celiac Family hasn’t had any asparagus in a while, but may try it on the family again with olive oil and Parmesan.  On her plate this week ais egg salad, avocado salsa on beef tacos, yummy cilantro rice and grilled chicken, broiled tilapia and asparagus, pizza and bonefish saucy shrimp.  Sounds like a delicious week!

Cheryl of Gluten Free Goodness reminds us that it is Celiac Awareness Month.  It sounds like the Alta’s pizza crust she made last week (two times!) was amazing, so I think I’ll have to check it out as a dinner option this weekend.  On Cheryl’s menu this week is Nightshad stew with fennel, white beans with greens, mahi mahi with kale pesto and asparagus.  Yum!

Wendy of Celiacs in the House has a menu influenced by the Gluten Free Allergen Free Expo, also, including Carnitas by Sephanie O’Dea, and Jalapeno Popper Waffles by Silvana Nardone.  Also on her menu is roasted chicken with roasted potatoes and broccoli, beef fried rice, and chicken stir fry with asparagus, snow peas and broccoli.  It’s the perfect menu for the chilly spring we are having!
