Menu Plan Monday – January 17, 2011
Here is my big girl a couple of days ago, coming home to the gluten and dairy free Do-Si-Do makeover. Cute, huh? Yeah, well, this week is her birthday and she will be twelve + one! Yikes! When did she get so grown up? Between the impending dual teen invasion and my older son (twelve +3) taking his driver’s permit test this week, mommy might be having a wee case of the vapors.

Monday: No school for the kiddos/retainer check-up/big boy skiing/mommy teaches gluten and dairy free muffin class (mmm….)
Slow Cooker Tangy Tomato Beef and a salad
Tuesday: mommy walk with a friend/Big girl’s birthday (it’s a biggie – she will be 12 +1. Yes, I am still in denial…)/bring the big boy in for driver’s permit test (yikes! Tuesday is a big day for both my big kids. I may need a hug…)
Birthday girl’s choice: Fajitas with all the fixings, salad with poppy seed dressing and Hot Chocolate Cupcakes
Wednesday: Hubby home from trip/little girl dance class/youth group
Turkey Pot Pie (also a big girl request) with a salad
Thursday: Girl Scout Brownie meeting
Roasted vegetable dinner (using lots of winter root veg) and a salad
Friday: elementary school concert
Kale and potato cakes from Celiacs in the House (regular and sweet potato versions), homemade turkey sausage and rainbow slaw
Saturday:
Again with a birthday dinner (but with daddy home to celebrate, too) Thai Chicken Pizza, salad and Hot Chocolate Cupcakes
Let me know how the sweet potato kale cakes turn out. I loved Valerie’s idea, but haven’t tried it yet. I’m going to have to add that Tangy Tomato Beef recipe to a menu plan soon.
Gluten-free dairy-free girl scout cookies??!!? Yahoo! I can’t wait to try those out.

The wealth of info on your website is exciting. I wish I could access things more proficiently. At Monday night’s class at Lakewinds I asked about your pie crust and your dry onion soup mix recipes. Sorry I have to bother you with an email but I can’t find them. Please send. I did come across your pizza crust, looking forward to this one also.
