Chicken is on sale again in my area.  Two for one- ya gotta love that!  It’s time for another chicken freezer plan.  This is another one adapted from Soopermom’s OAMC Pages.  I got the idea, recipes and shopping list on this plan originally from Soopermom’s OAMC Pages.  I have reorganized the plan to streamline it, adapted them to gluten and dairy free and changed the seasonings to how our family likes them.

This is a “dump chicken” freezer recipe session.  You are basically making a marinades to flavor your chicken.  These types of recipes are some of the fastest and easiest freezer recipes to assemble.  You simply take your marinade ingredients and toss into a gallon freezer zip-lock style bag.  Close the bag,  mix around the marinade ingredients.  Open the bag and toss raw chicken or frozen chicken pieces (do not thaw then re-freeze your chicken pieces) in.  Close the bag and squish the marinade all over the chicken pieces until well coated.  Open the bag slightly and press out as much air as possible.  Close again and then freeze.  Be sure to label your bags with the contents and date you packaged it with a Sharpie.  All my bags look alike when frozen!!  I put enough in each bag for 8 or so servings (enough for our family plus a guest or two or for left over lunches).  When you are done you have 7 different kinds of chicken in your freezer.  When I am ready for it, I thaw in the fridge then you can grill, bake, roast, stir-fry (nice for boneless skinless chicken breasts done in the Asian style marinades) or toss in the crockpot.  Add veggies, salad, or rice or whatever.

Periodically, I will post some of the other plans I have from other sites that work well and some I have created myself.  Most of the other site ones I end up having to adapt to our lovely diet and I like to have less sugar and more veggies involved so I just can’t help but alter them!

 

Printable Grocery List for Chicken Freezer Plan #3 has all ingredients needed for a single batch of each of the marinades listed below.  Each marinade is enough for 2 pounds, or 8 servings, of chicken.

Instructions for all below chicken recipes:

For immediate cooking: Pre-heat oven to 350 F. Place all ingredients into a large baking dish, turn chicken to coat. Bake until chicken juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).

For freezing:  Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.

To thaw and cook: Take the bag out of the freezer the night before, make sure the baggie is completely closed. Place the Bag on a shelf furthest from the freezer (It works best if the bag is laying flat, although this may not be the best option with a side-by-side fridge/freezer). Preheat the oven to 350 F. Empty the contents of the bag into a large baking dish andbake until the juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).

3 tablespoons smooth peanut butter
3 tablespoons gluten free ketchup
2 Tablespoons oil

BBQ Jelly Chicken
3/4 cup gluten free ketchup
3/4 cup blackberry jam
2 tablespoons white wine vinegar
1 teaspoon gluten free Worcestershire sauce
2 teaspoon chili powder, gluten free
1/8 teaspoon salt
Sweet & Spicy Chicken
1 1/2 cups gluten free salsa
1 cup apricot jam (I like fruit juice sweetened)
2 teaspoon dried minced onion
1 teaspoon salt
1 teaspoon gluten free chili powder
1 teaspoon ground cumin
1/2 teaspoon dried minced garlic
1/2 teaspoon crushed, dried red pepper flakes (optional)
1/4 teaspoon dried oregano
Honey Ginger Chicken
1/4 cup chopped onion
1/4 cup minced chives
2 tablespoons sherry, white grape juice or apple cider
1 1/2 Tablespoons honey
1 Tablespoon gluten free soy sauce
1 Tablespoon minced fresh ginger
Russian Chicken
1 1/8 cups jar apricot preserves (I like fruit juice sweetened)
2/3 cup gluten free mayonnaise
1/3 cup gluten free ketchup (I prefer fruit juice sweetened)
1/4 cup gluten free dill pickle relish
3 tablespoons dried minced onion
1 tablespoon dried dill weed
1 1/2 teaspoon dried parsley
1 teaspoon onion powder
1/2 teaspoon celery seed
1/2 teaspoon ground black pepper
Cranberry Chicken
1/2 cup cranberry juice (I prefer fruit juice sweetened)
1/4 cup orange juice
2 tablespoon olive oil
1 tablespoon gluten free soy sauce
1/8 teaspoon cinnamon
Raspberry Currant Chicken
1/2 cup currant jelly or seedless raspberry jelly
2 tablespoons gluten free chicken stock, apple juice or water
2 tablespoons raspberry white wine vinegar (or plain white wine vinegar)
1 Tablespoon sugar
1 Teaspoon ground black pepper
