Wow, has this week gotten away from me.  We had a couple of unexpected things happen this week, which threw off my original plans, so blogging took a back seat.  I am rearranging this week’s plans a bit to ease into Thanksgiving and still be able to enjoy the holiday.  Hop

efully this will also loosen up a bit of time for blogging also, but I may have to wait until Friday to get back into the full swing again.  Sorry, about that.  Hopefully, if you are following along with theorganizedchristmas.com plan, the lack of gluten free recipe replacements/ideas from me hasn’t thrown you off track.

This year’s Thanksgiving is VERY low key.  We only have the eight people in our house (plus one) coming this year, and I have scaled back big time on the menu.  I am doing a fresh, brined turkey, however, because that is one area I don’t want to skimp on for Thanksgiving.  Brining may sound complicated, but it’s super easy and it really makes a difference on how juicy your bird turns out.  Every thing else I am doing is a do ahead item (except roasting the turkey that day) and my kids are baking up the desserts.  My big girl will be doing her pumpkin pie and my son will be baking pecan tassies or tartlets.  I can’t wait to get my paws on their desserts!  My kittle lovey and I will be making some gingersnaps (double batch – half for now, half frozen for Christmas)  though I am sure several will end up in her tummy before we are done baking!

For this week’s menu, I am just using the meal plan I put together this week for a freezer plan some friends and I put together for another friend over the weekend.  It made 8 meals, 4 types duplicated.  I will be doing the same thing for my freezer, only making one meal for dinner and putting the duplicate into a freezer bag to have ready for a meal during the upcoming holiday season.  They are economical, yet tasty, and all can be dumped into a crock pot.  It was all planned out.  Why not use it for my family, too!

Monday:  Daddy’s cooking.  (Probably something eggy.)

Tuesday:  Slow Cooker Sweet and Sour Chicken, rice and salad

Wednesday:  Sloppy Joes (Sloppy Daddys at our house!), gluten free buns, and veggie sticks with dip

Friday:  Left overs!  The best part!!  Woo!

This weekend:  Slow Cooker Cassoulet, and White Bean Chicken Chili (but I will probably use turkey left overs instead of chicken).

My husband bakes wonderful treats but often when he is the one cooking dinner for the kids it is usually eggs, or egg sandwiches.  LOL!
