It’s day two over at organizedcristmas.com!   Instead if the Candy Cane Cookies (don’t worry, we will be making those later on), we are making GFCF Pumpkin Cookies instead.  I like to get the baking done first that also will be useful for Thanksgiving.  We will be making a triple batch.  One to freeze then vacuum seal for Christmas, one to freeze then vacuum seal for Thanksgiving and and to freeze and vacuum seal in smaller batches for after-school snacks, lunchboxes, and “just because.”

Don’t worry.  Most cookies will freeze beautifully for up to 3 months, so these are a great thing to do ahead.

We will actually be baking these tomorrow as that works better for our family’s schedule.  You don’t have to bake as many as we do, of course.  My family are major chow-hounds when it comes to these cookies, so they are really a staple around here.
