This past weekend I spent with four great friends up at a cabin on a lake.  It weather couldn’t have been better. It was super relaxing and so fun!  This being such a great time of year for fruit and veggies, it was really easy to stay gluten and dairy free.  It was also easy as I have such sweet friends!  My dear bud Carla even made sure no one dipped into my chip bag if they were “cheesy.”  Kate has a great post here about the weekend.

On the menu planning front, it’s toasty out, and the fruit has been leaping into my cart!  All meals will be accompanied by berries, melon, salads of mixed greens, and other great seasonal produce.  Yum!

I will be making up some egg and chicken salad to have on hand along with hummus.  My hubby is in a mood for quick, cool, non-cooking meals.  Sounds great to me!

Wednesday:  Packets of Talapia and Summer Veggies

Thursday: Chicken Club Sandwiches with Guacamole

Friday:  Nachos – GFCF style!

Hmmm….I think I know where the Tilapia and Veggie packet recipe came from! There are still drool spots on my Eating Well magazines!!Chicken salad sounds like a great idea. I think I will make some. We would do egg salad here but it makes Mike go ‘Ewww’. Can’t have that.I like your idea of doing a girls weekend annually. I imagine the other ladies will agree, but the husbands??
